Your bankroll is the total amount of money set aside for betting. A unit is a percentage of that bankroll, typically 1-3%. So a 1000 EUR bankroll with 2% units bets 20 EUR per pick. Bankroll management means deciding the unit size BEFORE you start betting, and sticking to it through losing streaks.
Three common staking plans: Flat (every bet is the same size regardless of confidence; safest), Percentage (every bet is a fixed % of current bankroll; recovers slower from drawdowns but compounds wins), Kelly Criterion (bet size scales with edge size; mathematically optimal long-term but high variance).
